This is another recipe I tried from Pinterest with the Zucchini from my garden.

Before even reading this recipe I thought it looked like a good thing for me try. I saw that it had yellow squash in it, and that made me think “yea, it isn’t only zucchini!” I also saw that it was covered in cheese, and lets be honest, cheese is delicious. When I went to read more about it I was drawn to it even more because it had green onions in it, and fresh basil. I really like fresh. Fresh has such nice flavors.
The picture below is what I started out with, but I ended up having to make a change.

The change that had to be made was the size of my glass pan. I had originally pulled out an 8×8 because that is what the recipe called for. I guess my Zuchinni’s were bigger than what was used in the original recipe because my vegetable mixture was too much for the 8×8.

It was really easy to mix. The website that gives the recipe did a great job of explaining how it should be done. I did not broil it, that is why the cheese is not beautiful and brown. I do not like broiling in the summer. It did cook really well, and the flavors that are in it go together so nicely. It is delicious, and it is a great way for someone (like me) who doesn’t like Zucchini very much to enjoy Zucchini in a meal. Try it, and then let me know what you think!
